In another installment of Pinterest FAIL…or Nah? I bring to you Breakfast Burritos. What I love about this recipe is that you can make enough to be frozen later, which means no one is harassing you to make breakfast. The burritos can be warmed up in the microwave which makes it super easy for the tribe to have a homemade breakfast on the go.
The original recipe is from one of my alter egos, The Pioneer Woman. Her recipes are always easy and very good. My mother in law hipped me to her on the Food Network, now we buy each other the cookbooks on holidays lol.
I did make some of my own adjustments to the recipe to make it my own, and so should you. Don’t be scurred, add what you and your tribe like!
Lets get started!
What you will need:
- Breakfast sausage (I used 2 1lb. rolls of turkey sausage)
- dozen large eggs (I used 8 since that’s what I had..judge your own life)
- seasoned salt
- garlic powder (optional)
- onion powder (optional)
- low fat ranch dressing (optional)
- diced potatoes (I used a package that had the green peppers and onion already in the package, you may make them from scratch or add any other veggies you like)
- shredded cheese (I used a 3 cheese blend in a 4 cup package)
- burrito sized tortillas (I used fajita size by mistake, so it took 2 packages)
Cut open package(s) of sausage and place in a large pot (or skillet) over medium heat. Make sure sausage is fully cooked. Crumble sausage while cooking. Once sausage has finished cooking, drain excess grease.
Add diced potatoes, onion, green peppers, or any other veggies you wish to add. Cook thoroughly or until fully thawed and warm.
whisk all eggs in a large bowl. Add seasonings to taste. I usually add seasoned salt, pepper, garlic powder, onion powder, and ranch dressing to my scrambled eggs on a regular day so that’s what I did with these eggs as well. Add 2 cups of the cheese to the eggs and mix well.
Add egg mixture to the sausage/potato mixture and turn the heat down to medium low. Fold ingredients every minute or so until eggs are fully cooked. I added more cheese after eggs were cooked. You may also add more seasonings as you see fit.
Take pot off of stove and place mixture in center of tortilla.
Fold sides, then start at the bottom of tortilla and roll upward.
Wrap burritos individually in saran wrap then aluminum foil. This way when they are ready to be eaten, you can just grab one, take the foil off and pop it in the microwave.
